Pork and Sauerkraut Perfect for College Football Game Day

Pork and Sauerkraut always finds its way on my table on New Years because it is a great addition to the College Bowl games fiesta. It’s time to break out that Slow Cooker. Pork and Sauerkraut slow cooker recipes can be found all over the net.

I don’t think there is any food in this world that was more made for each other than Pork and Sauerkraut. Although I don’t really believe in the myth that Pork and Sauerkraut bring good luck, I do know that it bring good eating and that is all that is important, especially on New Years Day Game Day.

Sauerkraut is German for “sour herb” or “sour cabbage”. Sauerkraut is finely shredded cabbage that has been fermented by various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus.

It has a long shelf-life and a distinctive sour flavor, both of which result from the lactic acid that forms when the bacteria ferment the sugars in the cabbage. It is therefore not to be confused with coleslaw, which receives its acidic taste from vinegar.

The acidic taste is the reason why pork and sauerkraut are such a wonderful combination. Nothing like putting all this in a big bun with mustard and any other condiment you may like and of course having a cold beer in hand also while watching the College Bowl Games. Man Life is good
